It was supposed to happen last year. The Houston Texans were everybody's dark horse to make a playoff run.
After a disappointing 6-10 season last year and sporting a horrendous defense, the Texans are finally ready to reach the postseason for the first time in franchise history.
Wade Phillips is back where he belongs as a defensive coordinator, converting the Texans to a 3-4 defense. They have a solid front seven with a few playmakers as well. The secondary was the team's biggest issue and they addressed it in a large manner.
Houston signed Johnathan Joseph to a five-year deal worth $48 million. That is money well-spent. Nnamdi Asomugha got all the headlines this offseason, and rightfully so, but Joseph was the second best corner on the market. He immediately improves a secondary that continuously was torched last year.
The offense will still be electric, even with the departure of Arian Foster's lead man Vonta Leach. Andre Johnson and Owen Daniels need to stay healthy as they are top tier players at their respective positions. Matt Schaub is among the league's top passers and Foster exploded onto the scene last year.


New guys to watch


» J.J. Watt. Immediately put on the first-team defense, Watt told me he needed to prove to his teammates through hard work and production that he belonged. According to Smith, who plays the opposite defensive end, "J.J. can do it, he's doing it every practice and he makes us better."
» Brooks Reed. Has not established the reputation that Watt has, but Reed is viewed as a high-energy guy who is learning a new defense. The 3-4 scheme being installed by coordinator Wade Phillips is going to need outside linebackers who can rush the passer. At this point, Reed is one injury away from having to deliver. Keep a close eye on Reed this preseason. There's cautious optimism that he'll contribute this season.
» Johnathan Joseph. Not new to the NFL, of course, but Joseph is a welcomed addition. Kubiak said Joseph came right in and became the leader of a secondary that lacked an identity last year. Johnson said that Joseph pushes him in every practice. Another player told me, "Andre isn't used to having a teammate challenge him that much.


Observation deck

1. Mario Williams looks natural at outside linebacker. I had some doubts about the Texans' decision to move Williams to linebacker, especially at his size, but coach Gary Kubiak gave an honest assessment of the situation.
"We're not trying to fool anyone that Mario is going to be in coverage a lot," Kubiak said. "He's rushing the passer."
After watching a 2 1/2-hour practice and talking with the people that have to block Williams, any doubts about his transition are gone.
"Now he gets a running start at you, explodes into you and then makes his move," offensive tackle Eric Winston said of Williams. "He's harder to block now than ever before."
Defensive end Antonio Smith added, "Mario now realizes that he can bull rush anybody, and he's playing like a guy that can dominate every play."
2. Owen Daniels is having a great camp. Andre Johnson said Daniels is having his best camp with the Texans.Matt Schaub explained that a healthy Daniels really takes some pressure off Johnson by splitting the safeties in the passing attack. Daniels said that he's more than a year removed from his injuries and feels quicker than ever. This looks like it could be a Pro Bowl season for the veteran tight end.
Leinart still hopes to start
Matt Leinart is behind Matt Schaub on the Texans' depth chart, but the former USC star still hopes to start, saying, "my career goal is always to be a starter." More ...

3. The offense is ready to play a real game. The Texans were able to send three different offensive groups on the field for a live two-minute drill. Even the third unit, led by rookie QB T.J. Yates, looked in control of the package. Schaub was quick to point out that everyone is back on offense except fullback Vonta Leach. Leach's replacement,Lawrence Vickers, has picked things up quickly.
4. More to come from Arian Foster. In talking with the running back, Foster said the sky is the limit for the offense. Don't forget, along with leading the league in rushing last year, he also caught 66 passes and it looks like the Texans are expanding his role in the passing game.

Whats A Crawfish Boil?

Shrimpcrab, and crawfish boils can be found across southern Louisiana. But it is the crawfish boil that is most closely associated with the region. TheBreaux Bridge Crawfish Festival has been named one of the top 10 food events by USA Today[3] and is a showcase for Cajun music and culture. Major crawfish boils are held by churches and other organizations as fundraisers throughout the spring. Tulane University holds an annual "Crawfest" in April, and the University of New Orleans holds an annual crawfish boil for all students at the end of the spring semester (Students unwinding on Crawfish and Unprecedented Fun—SUCAUF). Smaller events can be found in backyards and parks throughout April, May, and June. Locals traditionally eat crawfish, as well as crabs, without tools such as shell crackers or picks.
One reason for the popularity of crawfish may be price. During the height of the season (late spring) the price may be less than a $1.50/pound retail for live crawfish (2006) with crawfish prices currently being around $.99/pound. Shrimp and crab are higher valued cash crops, and can be a less affordable option for larger groups.

A boil is usually done in a large pot (60 to 80 quarts) fitted with a strainer and heated by propane. However, some traditionalists see no need for a strainer and make use of a net or a wire mesh scoop. Seasonings include crab boil packets, cayenne pepperhot saucesaltlemons, and bay leaf. Ears of corn, new potatoes, onions, and heads of garlic are usually included in shrimp and crawfish boils. Some people will add smoked sausage links and/or mushrooms. When cooking crawfish there is a debate over whether or not the crawfish must first be purged by covering them with clear water and a generous amount of salt for a few minutes. Advocates argue that this forces the crawfish to rid their bodies of impurities. Others argue that it does not work and is an unnecessary step. A "Boil Master" is in charge of making sure the ingredients go into the pot in the proper sequence and controls the timing of the steps. There are is no right or wrong when seasoning a crawfish boil and many experienced boilers simply go by feel although there are some guidelines to follow and a great deal of opinions on how a boiled crawfish should be seasoned.[4] Many recipes call for a short boil followed by a period of soaking with the heat turned off. The contents of the pot are removed, drained, and then dumped onto a newspaper covered table. Sometimes, crawfish may be dumped into the traditional watercraft in which crawfishermen have historically used to traverse the bayous and swamps; a pirogue. Bottles of hot sauce, lemons and melted butter are usually available, along with cocktail sauce at a shrimp boil. Some families like to use Italian salad dressing or ketchup, or a mixture of both

The Party this month is a 80s themed "BBQ with FREE Chicken, Grilled Shrimp and Sausage. Between the Cigars, , Music, Dancing the 80's  costumes and fun loving patrons, the night will be one to remember.The 80's BBQ starts at 11:00 a.m. Gene, Bobbie,Seana, Kim and Jess will be serving up House Margaritas $3.50, Domestics Wine and from the Well just $2.00 till 2p.m.  We will also have Patron specials through out the day. While the Catholic traditions of Louisiana were a strong draw to the immigrants from both Ireland and Acadia, a connection almost as binding was the anti-British feeling they shared.

Saint Patrick is most known for driving the snakes from Ireland. It is true there are no snakes in Ireland, but there probably never have been - the island was separated from the rest of the continent at the end of the Ice Age. As in many old pagan religions, serpent symbols were common and often worshipped. Driving the snakes from Ireland was probably symbolic of putting an end to that pagan practice. While not the first to bring Christianity to Ireland, it is Patrick who is said to have encountered the Druids at Tara and abolished their pagan rites. The story holds that he converted the warrior chiefs and princes, baptizing them and thousands of their subjects in the "Holy Wells" that still bear this name.
